Brown Sugar Ice Cream
1 x 395g Sweetened Condensed Milk
2 x Cups of Thick Cream
2 tbs Brown Sugar Syrup (Homemade – melt 1/4 cup of butter with brown sugar in a pan. Boil until thickened)
2 tsp Vanilla Essence
In a bowl plop the sweetened condensed milk, brown sugar syrup and vanilla essence! Mix until combined.
With a mixer (hand mixer or standing, whichever is your fancy) whip the thick cream until fluffy.
Fold whipped cream through the condensed milk mixture. Mine had lumps in it. Not sure if this was correct but I didn’t want to fold it too much because I didn’t want to squish the air out. I hear air is good. The lumps were still delicious though.
Pour into a loaf tin
Freeze for 6 hours or overnight
3 ripe peaches, cut into thin wedges. I think each peach made 16 slices
2 tbs caster sugar
2 tbs butter
Maple Syrup to taste
Melt sugar and butter in a sauce over medium heat
Once melted add the peaches and cook down until peaches are soft and the sugar has caramelized
Attack with a stick blender under it’s a chunky puree, looks like baby food.
Add Maple syrup but not too much or you’ll strangle the fruit!
Here is the waffle recipe I used – Make sure you have a good quality waffle maker!!
